I made this a couple weeks ago for the family I nanny (I know I posted it). But it was so good I had to make it for myself. It’s from #cookinglight and it is #DELICIOUS.
-4 oz uncooked soba noodles (buckwheat noodles)
-1 1/2 T low sodium soy sauce
-1 T dark sesame oil
-1 t brown sugar
-1 1/2 t lemon juice
-1/4 t crushed red pepper
-1/2 c julienne cut peppers (2in long)
-1/2 c julienne cut snow peas
-1/4 c thinly sliced green onion
1. Cook soba noodles according to package directions, omitting salt and fat; drain and rinse with cold water. Drain well.
2. Combine soy sauce, sesame oil, brown sugar, lemon juice & crushed red pepper in a medium bowl stirring well with a whisk. Add noodles, peppers, peas & green onions; toss well.
My notes: I added chicken for some extra protein and 2 t of chili paste for some spice.
